Emulsification functions to get the poorly soluble dietary lipids into mixed micelles. Micelles are aggregates formed in aqueous solution by a substance composed of both polar and nonpolar groups. Phosphatidylcholine is an example of a compound that forms micelles. Mixed micelles are micelles made up of more than one compound.
