But Carrazza Bread? Neverf heard of it, neither here nor in Italy. May some fancy name invention by someone who thought it sounded Italian ....

INTO SPANISH: 12:48am Nov 15, 2006: no .. :( - they've sent me a reference document with all types of bread... we have ciabatta, foccacia, and ALLLLL Italian rolls you may think of, but no CARRAZZA.. it also sounds strange to me... don't know how to translate it. What's more, it comes together (let's say part of the same category) with this strange "bifi" roll, which I guess contains meat...so I believe this carrazza thing must be a kind of sandwich, with any kind of filling... who knows the exact kind, anyway?

Secondo me potrebbe essere un typo per CARROZZA ed usato in inglese per intendere il pane usato nella preparazione della mozzarella in carrozza , quindi direi "pane per la preparazione della mozzarella in carrozza" (che potrebbe essere un pane che viene tagliato a fette come spiegato nella ricetta qui sotto, oppure un panino che viene tagliato leggermente per formare una tasca (pocket) in cui inserire la mozzarella, sempre nella preparazione della mozzarella in carrozza.
Oppure potrebbe essere una bararizzazione di una parola italiana, un po' come la FRESCHETTA una specie di panino pseudo-italiano che viene prodotto dalla Quizno's qui negli USA, e che viene biecamente spacciato per tipico pane italiano (quando invece e' un semplicissimo pane ciabatta, ma lo chiamano freschetta, mah)....

A carrozza is a "carriage," in this case **the bread that sandwiches the mozzarella** and delivers it to the table. Mozzarella in carrozza is southern Italy's grilled cheese sandwich, with a little anchovy to cut the cheese's milky sweetness and an egg batter to make a golden coat.
You can cook 4 sandwiches at once if you have a griddle or 2 nonstick skillets. Otherwise, you'll have to cook the sandwiches in batches. Keep the first batch warm in a low oven.
