If I'm not mistaken I don't think you can keep the phonetic pun in Italian so you might as well keep it in English.

So what I would do is leave the expression in English in " " and maybe add an explanation in brackets (although this might not even be necessary).

You have probably understood what the expression means i.e. going "back" on the tap to add more "black" liquid (ie Guinness), to top it up.
