-OK, LET'S VENTURE TO QUOTE THE/(this) PROVERB....
-OK, LET'S DARE TO QUOTE THE (this) PROVERB....
I'd translate "Allez" as "ok", maybe "c'mon", but I don't know if the latter is appropriate to your context...
