There were three answers that I felt were acceptable and completely usable. The explanations also increased my understanding of what should be communicated. The one I have chosen has a specific English equivalent from a US manufacturer of the same equipment. I cannot ask for anything better than that.

Sorry, I wanted to grade Ulrike's answer as "neutral", and just explain what a water jet cutter does. I don't think that her answer is the most appropirate.
First an explanation for water cutting:
Waterjet Profile Cutting uses a jet of water so powerful it cuts cleanly and precisely through material in a single pass without heat, shredding or crushing.
Waterjet Profile Cutting uses a combination of water and garnet to cut through materials considered "un-machineable" by conventional cutting methods.
Waterjet Profile Cutting eliminates the friction caused by tool-to-part contact and avoids thermal damage which can adversely affect metallurgic properties in materials being cut. The ability to pierce through material also eliminates the need and cost of drilling starter holes.
Now to your question:
As I understand it from the little context you gave, this is the area, where the water jet "builds up speed" before hitting the surface of the material.
