Dalle spiegazioni trovate in rete direi così. (il google sv.)

Metto questa risposta perché - da profana- non so cos'è una farina bigia, anche se da sempre faccio il pane in casa. In campagna vado dal fornaio, guardo nei sacchi e indico col dito la farina che vorrei avere. Non molto scientifico... ma efficace.

Ruch potrebbe derivare da "rauh" - ovvero un pò più ruvido.
