I'd go for 'graphical environment applications' over the full 'graphical user interface applications'.

Hmm. I've changed my mind. I would word it as 'applications in a graphical environment'. It is no more correct this way, but sounds friendlier :) I think 'graphical' is more correct than 'graphics' because we're describing the environment, not saying what it does. A graphics application, for example, would be one which is used to create graphics (Photoshop), but a graphical application or environment is one which USES graphics.
