It's usually "protesta"; "protesto" is a less frequent variant, presumably because that's what the person pronouncing the oath/affirmation says, or perhaps due to confusion with the notarial "protesto" on bills of exchange.

Depending on who is doing the "toma", because sometimes it refers to the person administering the oath or affirmation ("protesta"/"protesto"), and sometimes it refers to the person taking it, although strictly speaking I believe it is supposed to refer to the person doing the administering (but like all things, these lines become blurred once someone gets the wrong end of the stick and runs with it).

"En una ceremonia en la sede del Congreso nacional en Ciudad de México, el presidente electo Andrés Manuel López Obrador (AMLO) realizó una promesa de cumplimiento de la ley, tal y como lo dicta la Constitución.

Al acto se le llama “toma de protesta y la representación del pueblo -los diputados y los senadores- son los encargados de tomar esa declaración al nuevo mandatario."
