1. General.

Source text - English Discovering the Flavors of Latin America
For the next in a series of regional culinary workshops that began last year, a group of our executive chefs travelled to Buenos Aires, Argentina, to study and learn about the local and regional cuisine.
Led and organized by our Culinary Excellence group, these workshops are intended to update and increase the knowledge of our chefs so that they can in turn spread it throughout our worldwide network.
Conducted in late March at the Instituto Argentino de Gastronomia (Argentine Institute of Gastronomy), located in the capital, the workshop encompassed three days in of intense all-day sessions that mixed both theory and practice. As an example, one of them involved studying the different cuts of meat and then using them in the preparation of recipes highlighting tradition and local flavor: Empanadas, Milanesas and Matahambres are some of the names of the beef-based dishes our chefs were able to create and taste in this land of meat connoisseurs. In addition, they learned how to make the Latin American versions of ceviche, chorizo and codfish “baiana way.” The last day of the seminar was dedicated to pastries like dulce de leche (milk candy), churros (fried dough strings) and sweet media lunas, the local take on the croissant.

Realizado a fines de marzo en el Instituto Argentino de Gastronomía, que está emplazado en la capital, el taller abarcó tres días de sesiones intensas que combinaron teoría y práctica.
