Hi, I think the idea here is that the rocky formations either slope gradually or plummet vertically into the sea.

for "slittanti di sbieco" you could also use "sliding"; so something like "sheets of rock that slide or plummet into the sea" which perhaps sounds a little more like guidebook copy (assuming that is your context?)
