Can anyone please tell me the correct English term for this?
Context - a list of identification labels on boxes - "Uno strip dell'Indicatore del processo di sterilizzazione (nastro adesivo di viraggio)" ... I presume this means a strip or the colour indicator in the form of adhesive tape

Most likely in this context. "Viraggio" just means it's an indicator of some sort. Adhesive tape with strips that go dark when appropriate temperature and humidity is reached in an autoclave is very common. But I can't rule out that it's for some other sterilisation process.
