Of course, a latte is a type of coffee beverage. My dictionary defines it as:

Strong espresso coffee with a topping of frothed steamed milk

A signature latte is a latte that is made in a special way by a specific restaurant or café. The recipe is unique to that specific restaurant/café and would not be the same in other places. The word is used because the way you sign your name (your signature) is also unique and can't usually be duplicated by others.
