Neutraler Kommentar  Cetacea: I didn't know (technical) cooking terms could be esoteric. Weird, yes, but esoteric?? // True, but when I see "abpassieren" und "einreduzieren", it's not beginners that are being addressed...

  -> Yes, esoteric, as in "known to a small group." More people will understand "finish" than "mount." The best choice depends on the target audience.
