bind / thicken Erklärung: Cold butter is often added to sauces to bind them -------------------------------------------------- Note added at 8 mins (2006-07-13 10:15:37 GMT) -------------------------------------------------- it also gives the sauce a nice sheen. from: http://italianfood.about.com/library/weekly/blborken.htm ....and slightly reduce the liquid, then stir in the cold butter as a binding agent that will thicken the sauce as well as enrich it.
