En boca es fresco, graso, amplio, con un recorrido medio y una agradable persistencia.

I am unsure what recorrido medio means in this context. Any ideas?

I think it may refer to length, but again I can't find anything to back it up.

I've found several other examples, but none that explain the meaning. I'm guessing it's the time it takes for the flavour to hit your palate. Is there a word for that?

The search terms is "recorrido medio", but I have a feeling that "recorrido en boca" and "paso en boca" are synonyms. "Medio" (probably "average" in this context) does not worry me too much, but "recorrido" does. I still have the doubt whether "recorrido" and "paso" mean the same here.
