Au plan financier, le marché représentait à fin 2005 (dernières données disponibles) un encours d’épargne de 2,56 milliards F CFA soit environ 7% de l’encours des dépôts du secteur bancaire.
I am assuming that "encours d’épargne" is usually rendered as "savings outstanding"... if anybody has any recommendations for "encours des dépôts", I would be very grateful!

"Encours" often has the sense of "total amount/value/balance". While it's often translated "outstanding amount" or similar, that doesn't really work when you're talking about savings. Here, I would say "...7% of total banking sector deposit balances", or simply "7% of total bank deposit balances".

I think (total) deposits outstanding would work here
