Milling
Daily visual check of the ground malt: Are the husks clean without hard tips, are they crushed more than necessary, leading to longer run-off times? In case of conditioning: Is the water uptake enough (ca. 1-1.5 %)? Grading “dry grist” once a week. Wet mills are more difficult to check, as mostly there is no access for sampling. If possible to get access to the mill rollers, a *lead string* is useful to test the roller gaps, both left, center and right. If rollers are not accessible, the spent grains from the lauter tun have to be visually checked: Are there still whole kernels or very coarse
