Ende 1986 gelang der erste Nachweis von S. enteritidis im Direktausstrich aus der Ileocaecaltonsille einer Henne und anschließend auch aus Eieinschlagmasse.

My working theory tho is that the German word was chosen to imply that the Eimasse was contaminated at the point of Einschlag and not before, ie the raw egg was not contaminated until the shell was cracked open and infection spread from the shell to the liquid egg - but that might well be reading too much into it, just numerous texts discussing the issue and an attempt to explain why the author didn't just say rohes Ei!

Its just a suggestion, based on the very obvious link to the term for icing (and because icing/frosting is mentioned in tests for S. Enteritidis) but no one has said they're certain, not even the person who suggested it!

@Orla I know it can mean that - what I am questioning is how we can be certain that it means that here, since the term itself has no obvious link to icing and eggs can be beaten into all sorts of other things.

@Armorel Because Einschlagmasse can mean icing, frosting - Rollfondant, and can contain raw egg so its a valid suggestion! First thing that comes up when you google it. But yes as I more or less said below Eieinschlag means what youve described.

Why this focus on icing? I'm not clear where the idea comes from that this relates to icing. Wouldn't "Eieinschlagmasse" describe any dish that you fold raw beaten egg into, so including things like mousses and some sauces?

Eieinschlag is used when an egg is cracked into, eg, a soup so could just be the "Masse" after cracking open an egg - which is considered to be one way of spreading infection.

I think icing could make sense too - the 'Ei-' might just be there cos not all icing recipes include egg. And it's a similar idea to above. As the article posted by liz askew says "The egg whites used for the icing were the only raw food..." - hard to know without more context.

1. Einschlagmasse für Torten-> die Masse, die zum Einschlagen (Eindecken, Umhüllen) eines Kuchens verwendet wird-> fondant, marzipan etc.
( passt hier wohl eher nicht!)
2. Ei-Einschlagmasse: Eimasse, die sich im Inneren eines Hühnereis befindet (im Gegensatz zur Schalenoberfläche) und die dann nach dem Einschlag (Aufschlagen der Schale) verarbeitet wird.

Obwohl es seit langem bekannt ist bzw. angenommen wird, dass gerade der Kontakt des Eiinhaltes mit der Schalenoberfläche beim Einschlag für die Kontamination bedeutsam ist, wurde dieser Kontaminationsweg bislang experimentell nicht untersucht.
