El organismo contiene de 3 a 4 gramos de hierro que se distribuyen 50-60% en la hemoglobina, 30-35% almacenado en los depósitos del hígado, bazo, riñón y médula ósea, el resto es constituyente de numerosas enzimas (citocromos, citocromo-oxidasa y catalasa principalmente), se cuenta con hierro hemínico y con hierro total (hemínico y no hemínico), se ha determinado que el requerimiento de hierro en mg/d varía dependiente de la biodisponiblidad del hierro (alta, media o baja) pero estos en varones adultos oscilan entre 15 mg/d en la baja a 5 mg/d en la alta. De lo encontrado se puede determinar que el consumo de hierro total en XXX el 75% tiene un consumo de 2 mg o menos, al encontrar las diferencias por ámbitos se pudo determinar que XXX es la que mantiene mejores consumos y XXX los menores. Al realizar la disgregación de los alimentos donde se encuentra la mayor concentración de hierro total, podemos determinar al pan con 5,77 mg, el consumo de segundos con 4,85 mg y las entradas con 4,56 mg. Al realizar el análisis de familias con deficiencia de hierro podemos encontrar que el resto de costa presenta el mayor porcentaje con 82,5%, siendo a nivel nacional de 73,0%; XXX presentó el menor porcentaje con 59,1%.
