Necesitamos un término que exprese el color de un pan que está en su punto. Un buen color implica una buena textura, pero "bloom" no se refiere directamente a la textura.
Como ha señalado Taña, "bloom" tiene otros sentidos en relación con el pan, pero este sí que es uno de ellos:
"Golden yellow in color (called "bloom"), neither too pale nor too striking, the crust had a uniform thickness and a smooth surface, devoid of fissures, a leathery touch, or an overglazed cast."

Es verdad que "dorado" no es sinónimo de "brown", pero en este contexto me parece más natural en español.
Como ha señalado Taña, "bloom" tiene otros sentidos en relación con el pan, pero este sí que es uno de ellos:

churruscadillo, corteza crujiente
EN este caso, o usaría un término coloquial, que indique que está crujiente y sabroso pero no quemado. Incluso un diminutivo, churruscadillo, crujientito, indica mejor la sensación de gusto.
