This term is included in a list of products that the manufacturer produces with alginates. The other products in the list are

Wirkstoffkügelchen

By the way if you have any ideas on "Wirkstoffkügelchen" I would be grateful for help in this regard as well.

This is a wild guess: the German "Rippel" may have been derived from the English "ripple" -> ice cream ripple.
To be honest: I would ask the client.

I'm just guessing - but the food manufacturer whose url I paste below does say "From biscuit fillings to ice cream ripple sauces, ..."

No idea about the other one, sorry.

1. Wenn, dann "ripple ice cream", nicht "ice cream ripple" ... but I'm not convinced that this is what is meant, since it is not the ripples that require alginates, but the ice cream itself. Given that "Eisrippel" gets ZERO Googles, I think you have little choice but to ask the client for an explanation.

2. This really should be posted as a separate question for the benefit of the glossary, but there is significant evidence for "biocatalyst beads" for Wirkstoffkügelchen, see e.g. http://www.bioline.org.br/request?jb03012
