regional freerange beef

alm - Austrian freerange farm on the mountain // ochse - ox //
filet - filet

my guess
Peer comment(s):

agree BrigitteHilgner : "Spot on", I'd say (living in Austria). Supposed to stand for quality (freerange on a meadow high up in the mountains).

thanks
agree Uta Waller : I'd say "local (Kärnten) freerange" if the hotel is in situ. If not, I'd just say "Kärnten freerange".

good suggestion, also
agree writeaway : free range (in two words)

did a spell check on "freerange" and it didn't object, but I googled after I saw your comment and you are right.
agree JeffFish (X) : "local free range" or "Carinthian free range"

agree Tatjana Dujmic : local rather than regional

local pasture-reared beef

I don't know why, but free range makes me think of chickens. This is another option which perhaps conveys the rural connotations of alm in the German

Thanks Friderike
agree Martina Burkert : I like that one too. Free range is certainly correct but it has a bit of a "modern" organic flavor while the expression Almochse conveys traditional values.

Thanks Martina - maybe more the sort of thing Heidi might have eaten?

Beef tenderloin (from the high plains steer)

they ask specifically for filet (which is the tenderloin).

Freerange cattle can be found anywhere (and is not the most desireable cut) because of little fat and lot of muscle.

Here, a point is made of alms (high plains grazing land). I'd just say 'Beef tenderloin from the high plains' because everybody knows that the best beef comes from the steer (and not the bull or cow)
Peer comment(s):

neutral Lancashireman : Unless Clint Eastwood 'drifts' into sight this would strike a diner as un-Austrian

Clint eastwood probably its beef jerky. But like your repartee. Thing is, filet is TENDERLOIN. I want corn-fed beef, not some that has been driven (freeranged) by Clint from Abilene to Kansas. How about high pasture tenderloin.
neutral Martina Burkert : There are no high plains in the Alps. Almen usually belong to the steepest agriculturally used not terraced terrains.
